1. An isolated nucleic acid comprising a DNA that encodes, in a non-Candida rugosa cell, a lipase at least 98% identical to SEQ ID NO:2, wherein the DNA has at least 15 CTG codons encoding the serines in SEQ ID NO:2, when expressed in Candida rugosa, replaced with a universal serine codon selected from TCT, TCC, TCA, TCG, AGT, or AGC.
