| 1. A method of obtaining a structured fat, the method comprising:
(a) providing:
(i) one or more edible oil, wherein said one or more edible oil is selected from the group consisting of sunflower, groundnut,
safflower, rapeseed, soybean, and fish oil;
(ii) ethyl behenate; and
(iii) a thermostable lipase, wherein the thermostable lipase is a 1,3-specific lipase obtained from Mucor miehei and wherein said lipase is LIPOZYME™;
(b) inter-esterifying said one or more edible oil with said ethyl behenate in the presence of said thermostable lipase and
at a temperature in the range of 25° C. to 150° C. for at least 0.5 hours, thereby providing a structured fat; and
(c) recovering the structured fat, wherein said structured fat comprises triglycerides and wherein the triglycerides comprise
behenate inter-esterified triglycerides.
